The captain should build a good team and keep communication lines wide open as to the successes and challenges of each team. Communication is everything, which is why it is good to have captains. The Big Bosses would have a ton of work organizing and following up on every challenge in every game. But regardless, there is a spot on your fellowship's main page that will have a drop down menu of teams of that game that you can challenge. So, if Halma is the only game you have set up as a team in your fellowship, for example, you will have to add teams for the games you want to add to your stairs.
You don't have to create new stairs for the new games.
